Η καραγενάνη είναι πολυσακχαρίτης, που χρησιμοποιείται ως προσθετικό τροφίμων. Η κύρια χρήση της είναι στα γαλακτοκομικά και στα κρεατικά, εξαιτίας των ισχυρών δεσμών της με τις πρωτεΐνες των τροφίμων. Υπάρχουν 3 κύριες ποικιλίες καραγενάνης.Στην Ευρώπη απαγορεύεται η χρήση της για οργανικά ή άλλα προϊόντα για βρέφη για προληπτικούς λόγους.
